Hamo (Japanese conger eel) is an iconic summer food in Kyoto. Boasting a light-yet-rich flavor, hamo can be enjoyed in a variety of ways: sashimi-style, grilled, or fried. Savory broth is another of its charms. For our dishes, we combine hamo with more gifts of this season, summer vegetables and natural mushrooms.
